  • 7 7 7tablespoons TABLESPOON_USVolumebalsamic vinegar
  • 3 3 3tablespoons TABLESPOON_USVolumesherry
  • 1 1 1cup CUP_USVolumeBrown Veal Stock (see "Soups & Stocks")
  • 4 4 4slices bacon, cut crosswise in 1/4-inch pieces
  • 6 6 6ounces OUNCE_USVolumecabbage, cut into julienne
  • 1 1 1teaspoon TEASPOON_USVolumeDijon mustard
  • 2 2 2tablespoons TABLESPOON_USVolumepeeled, seeded, and chopped tomatoes
  • 1 1 1teaspoon TEASPOON_USVolumeminced chives

ABOUT THIS RECIPE

The quantities may be easily doubled or tripled for larger parties. If you can find apple balsamic vinegar, available in some gourmet shops, use it in place of the regular balsamic vinegar.
