COLD CREAM OF WATERCRESS SOUP


Ingredients

  • 4 4 4leeks, white parts only, thoroughly washed and chopped
  • 3 3 3bunches watercress, thoroughly washed, leaves separated from stems, stems chopped
  • 6 6 6cups CUP_USVolumechicken stock or chicken broth
  • 5 5 5medium baking potatoes, peeled and sliced
  • Salt
  • Freshly ground black pepper
  • 1 1 1cup CUP_USVolumecrème fraîche or 1/2 cup each heavy cream and sour cream
  • 1 1 1teaspoon TEASPOON_USVolumelemon juice

ABOUT THIS RECIPE

The basic recipe for this country-style soup is the same as for any cream soup. Simply replace the watercress with sorrel, lettuce, spinach, or any vegetable of your choice. The soup is also delicious served hot, right from the pot.
