leek, thoroughly washed

sprig fresh thyme or pinch dried thyme

bay leaf

salt

Freshly ground black pepper
2 us liquid quart s
water
2 cup s
dry white wine
  1. Slice the carrots, celery, and leek into ¼-inch pieces. Put them in a saucepan. 
  2. Add the remaining ingredients and bring to a boil. Continue boiling for 20 minutes, until the liquid is flavorful.
