INGREDIENTS:

  • 12 12 12artichoke hearts
  • 1/4 .25 .25cup CUP_USVolumeshallots, chopped
  • 1/2 .50 .50cup CUP_USVolumeolive oil
  • 3 3 3tablespoons TABLESPOON_USVolumesherry vinegar
  • 2 2 2teaspoons TEASPOON_USVolumefresh thyme, chopped
  • 2 2 2teaspoons TEASPOON_USVolumeparsley, chopped
  • Salt and pepper to taste
Instructions for Marinated Artichoke Salad Recipe

  1. Cook artichoke hearts in salted water. When tender, allow to cool.
  2. Mix olive oil, sherry vinegar, chopped shallots, chopped thyme, chopped parsley, salt and black pepper.
  3. Marinate artichokes in mixture for several hours.
